Grano Salis represents a gastronomic challenge to emphasize modern design which could also meet the tastes of people in different walks of life. It is located in Via Dante Alighieri and it presents innovative and courageous architecture.
It’s a multi-functional restaurant (pizzeria and bacaro – a Venetian-type wine bar with snacks), and is the first of a probable chain.
The restaurant includes the functional areas of kitchen, washing rooms and storeroom and has a large space which expedites the movement of the waiters and reduces kitchen traffic.
Entering, patrons are in the center of action of the restaurant, the wine bar area, where they can enjoy pre- dinner cocktails standing up or sitting on bar stools before passing on to the restaurant itself.
On the left, patrons can enter the Pizzeria where the big marble wall is equipped with a wood oven. Seats here are arranged in many ways (depending on the kind of tables and chairs).

In front of the kitchen is a long white marble bar, with stools, where patrons can have a drink or eat while observing the cooks through the glass doors (white enamelled glass alternating with transparent glass and transparent stands displaying products).
The gastronomic area is located to the right of the wine bar and has a 9-metre-long counter offers a rich choice of conserved products or cooked dishes.
The nearby fish bar hosts up to ten customers who can eat tapas, small dishes, and prepared soups while observing the chef giving the final touches to the plates. Around this peninsula, you can sit at both rectangular and round tables.
We had the privilege to participate in the workgroup that constructed the restaurant. In addition, we managed the authorisation procedures for operation.
